FISH BARBECUE MASTERCLASS


There are few better meals than a piece of great quality fish, simply grilled or smoked. The emphasis of this fun, relaxed, hands-on class is on learning to choose the best fish, and to bring out its best using the barbecue.

DISHES

Supply of fish varies hugely, so we work with the best available on the day of the class. We always aim to cook something from all these categories:

  • Shellfish cooked “on the shell”, such as oysters or scallops
  • Oily fish, such as mackerel
  • Round fish, such as sea bass or bream
  • A cephalopod like squid or octopus

FORMAT

The class is instructive, relaxed and fun. For best use of the time we’ll light the barbecues in advance. Your tutor will introduce the fish we will cook, explain why they were selected, and discuss how to buy the best fish yourselves; then we get into cooking and eating. The exact cooking format can vary slightly due to availability (and size) of the fish we can obtain but we generally cook the shellfish for the whole group on one barbecue; then participants cook all of the other fish.

  • All the ingredients, equipment and fuel for the class – there will be plenty to eat.
  • A barbecue per 3 people (we’ll match you up with others if you come on you own)
  • Notes and recipes (electronic format)
  • Alcoholic drinks – available to purchase

Important Information

  • Due to the risk of cross-contamination from ingredients containing shellfish, this class is not suitable for people with shellfish allergies.
  • Advanced written warning of any food allergies or dietary requirements is needed. We cannot guarantee to accommodate all allergies and dietary requirements, please contact us before booking if you have a dietary requirement or allergy.
  • Participants are required to wear flat, closed sole footwear for the class, we cannot allow entry to people who are not wearing this type of footwear.
  • Classes are only for participants aged 16 or older (due to a licensing restriction over which we have no discretion). Participants aged 16 or 17 must be accompanied by an adult participant for the duration of the class.
  • Classes are for paid participants only, we cannot accommodate extra guests as spectators. There is not a waiting area at the school for non-participants.
  • Classes can be cancelled/rearranged up to 2 weeks prior to the class date - but please give us as much notice as you can. After that cancellation/rebooking fees are payable unless we can fill your space. Refunds are subject to a 2.75% fee to cover non-recoverable expenses we incur when processing payments.

All dates of our 2024 season have taken place and we have closed for winter. Our first dates of the 2025 season will go on sale early in February and classes will start in April, you can see which classes will run and with what scheduling and frequency here.
